Joan's Ziti Tomato Salad



Joan's Ziti Tomato Salad

5 to 6 fresh ripe tomatoes quartered
1-pound fresh mozzarella cheese, diced
1 cup grated Parmesan cheese
2 bunches fresh basil chopped (2 cups)
3/4 cups good virgin olive oil 
Salt and pepper to taste
1 (16 ounce) package ziti

Toss the tomatoes in a bowl with the basil leaves, mozzarella cheese, olive oil,
salt and pepper, half the Parmesan cheese.
Let marinate at least four hours or over night.
When ready to serve Cook the pasta according to package directions. 
Pour the hot pasta in the bowl with the marinated tomatoes and toss with remaining Parmesan cheese.   

LEFTOVERS:  Warm in a microwave a few minutes before serving.  You want the pasta warm and the cheese to be gooey.
