Spinach Dip



Spinach Dip

2 tablespoons minced garlic
2 tablespoons minced red onion
1 teaspoon olive oil
2 cups packed fresh spinach, washed and pat dry
1/2 cup silken tofu
1/2 cup nonfat sour cream
1/4 cup canola oil mayonnaise
1 teaspoon garlic powder
1 tablespoon onion powder

1.  In a medium sauté pan, sauté garlic and red onion in olive oil over medium heat until
     translucent. Add spinach and cook until wilted. Cool.
2.  In a food processor, combine tofu, sour cream, mayonnaise and garlic powder and
     onion powder.  Mix until smooth. Add spinach mixture and mix briefly. Chill in
     refrigerator.

Makes 12 (2-tablespoon) servings, each containing approximately:
60 calories
4 gm. carbohydrate
4 gm. fat
4 mg. cholesterol
2 gm. protein
51 mg. sodium
1 gm. Fiber
