The key to getting a good guided tour in any destination, I think, is to go with the specialists. Those companies that limit their focus to just a handful of destinations will often (though not always) hire the more expert tour guides, create the most innovative itineraries, and provide food options that go beyond the usual.
I can't leave this message without voicing my opinion that Ireland is not a destination that requires a guided tour to be enjoyable. It's easy to get around (thanks to well-maintained roads and a good train system), the language is English and tours at every major (and most minor) tourist sights can be easily booked on the spot. And one of the great joys of traveling in Ireland is simply kicking back in local pubs and dishing the dirt with the locals. You'll be less likely to do that if you're worrying about missing the tour bus to the next destination. Just a thought!
