How To Make The Perfect Steak





With barbeque season here--almost everyone is throwing different meats on the grill. But who doesn't love a perfect juicy steak at any time of the year? Here are a few tips to choose and prepare the best steak just like they do in the restaurants. Try it at your next BBQ so you can impress your friends and family and leave them asking how you did it!
 

1. Chose the best possible meat: chose a High Grade Angus or Prime Grade. Look for clean white fat with rich, rich marbling (webs of fat the speckle the face of the steak). If you¹re shopping with a butcher, don¹t be shy about asking him to smell the steak (or smelling it yourself).  You should smell earthy, cheesy, Beefy barnyard notes....
 
 2. Look for rich Marbeling
 
 3. Avoid any marinades on a luxe cut like a strip or rib eye
 
 4. Be generous with the salt and pepper just before cooking
 
 5. Temper the meat (leave it relax at room temperature before cooking)
 
 6. Let a piece of meat relax after cooking as well this allows juices to redistribute themselves. Generous brushing with soft butter at this point.
 
7. Use a Cake tester for checking temperatures stick the meat with the tester touch it to lip or wrist like a babies bottle Medium Rare will feel ever so slightly warm at center.
