Lobster Cakes and Carrie Fisher





With today’s New York Times talking about the low price of lobsters we decided instead of crab cakes for the holidays, why not lobster cakes!  The recipe is the same, and directly from one of our Maryland coast listeners. (Just substitute lobster)
 
3 Tablespoons light mayonnaise
1 Tablespoon Dijon mustard
1-pound fresh crabmeat- lump or back fin
8 saltines crackers crushed
Butter & olive oil for sautéing
 
Pick over the meat, removing any cartilage or shells
Mix together crabmeat, crushed saltines, light mayonnaise, and mustard.
Form into six to eight crab cakes
Chill crab cakes for 1 –2 hours- in the refrigerator to make them firm so they don't fall apart
In a large pan, sauté the cakes in butter and olive oil until golden brown. Serve with lemon wedges. 
 
Did any of you catch the story about Oprah admitting to weighing over 200 pounds?  What happened to Bob Green and the rest of her support system?  How well we know that losing weight and keeping it off is a lot more complicated than a diet.  Oprah’s honestly is why people love her; she lets it all hang out!
 
Carrier Fisher, the daughter of Debbie Reynolds and Eddie Fisher, stopped by the studio today.  She has had a star-studded career as actress and author, much of it predicated on her experience with mental illness and addictions.  How she makes it funny is beyond belief, but funny she is.
