1 cup sugar
1 3/4 cup all-purpose flour
Pinch salt
1 teaspoon baking powder
1 1/2 teaspoon baking soda
1/4 cup cocoa powder, sifted
2 egg whites
1/3 cup canola oil
1 cup skim milk
4 Tazo chai tea bags, soaked in 3/4 cup hot water
2 teaspoons vanilla extract
1. Preheat oven to 400°. Lightly coat muffin tins with canola oil.
2. In a large bowl, combine dry ingredients and mix until combined.
3. In a small bowl, combine wet ingredients. Mix well with wire whip. Add dry
ingredients and mix until just combined.
4. Bake for 10 to 15 minutes or until toothpick inserted in center of muffin comes
out clean.
Makes 12 muffins, each containing approximately:
