What do you do when the Governor of the state of New York comes for dinner? Governor Paterson, was going to be in the Hamptons for an event last weekend. And a bunch of us decided that we would get together for a very informal social Friday night dinner. The only problem was I working all week and did not have the time to shop or cook. Did I mention that the dinner was at my house. What to do ? I called on various friends to pitch in, including Biana, a successful manicurist, who said she would be available to do dishes; Jane Ridolfi, a chef, said she would cook and shop. Twenty-Two people, later we were rolling. A last minute menu- thanks to Jane -a mix of lamb, chicken, fish with potatoes gratin, tomato salad and Jane’s fabulous mini desserts from tiny crème brulees to hot fudge sundaes. The Governor was funny and charming and the Republican guests were taken with him. Robert Caro, the Pulitzer Prize winning author, and his wife Ina; Jerry Della Femina, advertising guru, and his wife Judy Licht, the journalist; Joy Behar and her partner, Steve Janowitz wer among the guests. All went well and we had a wonderful evening.
Here is the recipe for Jane’s Asian Salmon -one of the dishes served
Asian Salmon
1 1/2 cups low sodium soy sauce
2 garlic cloves
9 sliced & peeled ginger coins (1/4 " thick)
3 T sesame oil
3 T sugar
Put all ingredients in a blender and pour of salmon . depending on the
dish (with high sides) that you use, it may or may not cover the salmon - so turn every once in awhile.
Marinate salmon for at least an hour, but not overnight
The Salmon can be grilled or roasted in oven...425 for 20 minutes in oven and to grill - cover on -about 10 minutes
You can also use the discarded marinade for a sauce...boil then simmer
for 5-7 minutes.... Enjoy
